How to Make Wonton Soup

INGREDIENTS: 1.5 lbs. pork neck bone; kosher salt; 8 (1/8″) ginger slices; 10 c. cold water; 2 scallions sliced thinly on bias. RECIPE: Salt pork neck bones liberally w/ kosher salt covering all sides. Place in plastic container; refrigerate 12 hrs. or overnight. Place bones in slow cooker or cast iron stockpot. Add cold water to cover bones by 4″. Add ginger and a few dashes of salt. For slow cooker, set to high and time for 8 hrs. For stockpot, bring to boil then let simmer 8 hrs. Salt to taste. Top with scallions.
