Tofu Tacos with Peanut Salsa
INGREDIENTS: 1 brick extra firm tofu (wrapped in 10 paper towels and rested for 2 hr in the fridge); 1 head broccoli; Ã‚_ cup oil; crushed tortilla chips; peanut salsa. RECIPE: Slice tofu into cubes. Cut broccoli into florets, season with salt and Ã‚_ c. oil; roast in the oven at 450 for 9 min. Put tofu & broccoli in a pan with Ã‚_ c. oil. Add a pinch of salt. Cook for 2 min or until tofu gets golden. Add 2 T peanut salsa. Warm tortillas on a dry pan and serve in tortillas topped w/ crushed tortilla chips.
