Mexican Red Salsa


  • 5 plum tomatoes
  • 1 T chipotle en adobo
  • white onion diced
  • 1 garlic clove diced
  • 3 limes
  • vinegar
  • salt to taste
  • jalapeno seeded
  • chopped cilantro.

RECIPE: Roast tomatoes with half of the diced onion in dry pan over med-high heat. Puree tomatoes, onion, garlic, jalapeno, chipotle, vinegar, salt, lime juice. Add more vinegar and jalapeno to taste. Mix in other half of onion and the chopped cilantro at the end.
