Sesame Chicken

RECIPE: 1 lb chicken breasts; 2 T each tapioca starch, soy sauce, water, cane sugar, sesame oil; 1 tsp each fish sauce, minced ginger, Shaoxing wine; 1 T each sambal oelek, hot chili sauce, fermented black beans, sesame seeds; 3 garlic cloves; 3 scallions cut in 3″ pieces & halved; 1 scallion sliced thin on bias; 5 (Â_”) slices ginger cut in strips. Mix soy, fish & chili sauces w/ water, sambal, sugar, oil, garlic, ginger, beans & wine. Toss chicken w/ tapioca. Saute ginger & scallions. Add chicken; saute til edges are white. Reduce heat; add sauce. Cook 7 min. Top w/ sesame seeds & scallions.
