RECIPE: 4 (8.5″ diameter) round rice wrappers; 1 T neutral oil; 6 lg. blue shrimp; 2 minced garlic gloves; 1 julienned scallion, carrot & cuke; 6 lime wedges; 1 T cane sugar; 8 oz vermicelli; 12 Thai basil leaves; 12 mint leaves; 20 cilantro leaves. Saute garlic; season shrimp w/ salt, sugar, lime; cook in garlic pan. Remove & butterfly. Put wrappers in hot water till pliable. Put 3 shrimp halves on wrapper w/ 3 each julienned carrots & cukes & 2 julienned scallions on each side. Top w/ 3 basil leaves, 2 oz. vermicelli, juice of 1 lime wedge; 5 cilantro leaves & 3 mint leaves. Seal wrapper.
