Bacon Mashed Potatoes
RECIPE: 1â„2 c. unsalted butter; 2 lbs cubed potatoes; 1 c. 2% milk; 1 c. crumbled bacon. Bring the potatoes to a boil over medium-high heat then gently simmer over medium-low heat for about 15 minutes. Drain potatoes well in a colander. Pass batches of potatoes through a ricer or masher. Add butter and milk to mashed potatoes; stir constantly until potatoes become creamy. Fold bacon into mashed potatoes. Transfer to serving the dish and serve immediately.
