INGREDIENTS: 2 Q chicken stock; 6 slices ginger; 2 (6″x6″) slice kombu, dampened; 3/4 c. white soy sauce; 1.5 c. soy sauce; 1/4 c. dried bonito flakes; 1 tsp cane sugar; 2 T neutral oil; 1/2 lb pork belly; 2 T cane sugar; 5 scallions; 5 (1/8″) ginger slices; 4 garlic cloves; 10 shiitake mushrooms; 2 oz onion; 3 T Shaoxing wine; 10 star anise; 1 tsp sesame oil; 1 c. mirin; 1/4 c. each soy, fish sauce; 3 T cane sugar; 1 tsp Lao Gan Ma chili oil; wonton soup; 2 eggs; 5 oz ramen noodles; 1/2 c. each spinach, string mushrooms; 1 (6″x6″) nori; 1/2 c. bamboo shoots; Togarashi seasoning.
